Yuck and Damn!

Breakfast around my place can be a challenge. For one thing I don't like breakfast when I first get up, I just want coffee, that's it, and time to drink it and check my email while drinking. But then an hour or two after that I start thinking about something to eat, but I don't really like breakfast food, at least not in the morning. A nice omelet for lunch or dinner, French Toast for dinner with crisp bacon, that's fine but I don't particularly like them for breakfast. And don't mention donuts, or other sweet food, never at breakfast it's a sure way to get my day off to a bad start.


So, why this rambling rant? Today, I went to my massage therapist because of my usual knotted shoulders and neck, and got home around 10:15, it was now time for breakfast. There is one donut shop in town, they have other things for breakfast, like breakfast burritos, sausage biscuits, etc., none of which I'm fond of, not from there, what they do have that is somewhat eatable are Kolaches, basically pigs in a blanket. But they have them with cheese and jalapeños. While not wonderful, they are as I said eatable, and sometimes hit the spot, unfortunately not today. So I sent Jerry out for some, since I forgot to stop and pick some up on the way home. Jerry likes the Kolaches, and he likes donuts, too, so it's a good match.

Two of these things are more than enough, and today was not an exception, what was an exception was the fact that they weren't spicy as usual, nor was there much if any cheese in them. I suspect Jerry got the wrong ones, the not spicy ones, just the plain ones.


I sure wish there was a great breakfast place around here, somewhere that served breakfast all day long, had omelets to die for, or a good Italian frittata baked to perfection, if you don't know what a frittata is I put a recipe at the bottom of the page. I'd love a place where I could get a really good waffle, without whipped cream, or sweetened fruit on top, but one where the waffle was crispy, with fresh fruit, maybe a little fresh unsalted butter, and something to dip it in, not pour over it. Served with a good strong coffee and some fresh juice, that would be a good breakfast, and served anytime, all day, not just till 10:30 or 11:00 but all day for those of us who like breakfast for dinner.

Frittata Recipe:

You need a 12” oven proof skillet

1.Adjust top oven rack - with a skillet (oven proof!) on it, you want the top of the skillet to be 4-6 inches from the broiler. Turn on broiler, to preheat

2.Put skillet (preferably 12" nonstick) on stove and add about a tablespoon of olive or canola oil, and 1 tsp butter. Add any raw vegetables or meat you want in your frittata and saute until done, adding any herbs, spices you might like, I like dill depending on the other ingredients.

3.Add any precooked ingredients and heat them through.

4.Whisk eggs (12 eggs for a thick frittata in a 12" skillet, fewer eggs for a thinner frittata or in a smaller skillet) with pepper and 3 Tablespoons milk, half and half, or cream. (Half and half is said to produce the best results.) If using cheese, add about half to the eggs now and save the other half for the top later. Add egg mixture to skillet.

5.On medium heat, cook eggs for about 2 minutes, scraping the sides and bottom with heat-resistant spatula. When eggs are mostly cooked but still very wet, stop stirring. You want to see cooked egg scattered throughout, but loose egg in between.

6.Continue cooking on stove for another minute so underside sets, be careful not to brown the bottom at this time, use a medium to medium low heat.

7.Sprinkle the rest of the cheese on top and place skillet under broiler. Watch carefully while top browns. This will take 2-4 minutes

8.Remove skillet from oven and let sit for about 5 minutes to finish cooking in center.

9.Cut in wedges and serve with fresh fruit and toast.

Please note that I do not add salt to the eggs while they are cooking, I believe that it makes them tough. Besides depending on ingredients some frittatas don't need salt. Have it on the table for those who can't live without it.

Obviously this serves more than four people, but you can save it by covering it with plastic wrap or putting leftovers in a plastic bag and reheat in microwave (just don't over cook when reheating)

Sounds delicious. I like breakfast for dinner as well.
