Different Snacks, Finishes, and Goodies

Last might as I was making myself a dinner of quesadillas made of Ricotta, salsa, and red and green peppers (I thought) I realized that there are all types of goodies, snacks, and finishes to meals that are different, unusual and frequently not thought of. Therefore I decided that I'd make a long list and let your imagination take off from there. So here's a list.
Many uses for Ricotta
1.Ricotta and homemake jam sandwiches (on toast or not)
2.Peanut butter, jelly and Ricotta cheese (honest it works
3.Ricotta on a hamburger, allowed to melt slightly)
4.Ricotta mixed in with regular Mac and Cheese (use your usual cheese and add ricotta, remembering that it takes longer to melt ricotta
Ricotta salad with tomatoes, green peppers, cucumbers, red onions, olives (green and black) and a balsamic and olive oil dressing
5.Ricotta (melted), tomato, cilantro, jalapeños, melted Mexican cheese for a dip for chips
6 Quesadillas, with salsa, Italian sauce, add peppers, meat (already cooked, chicken, other cheeses)
Veggies & Fruits to fry:
1.Kale
2.Sweet Potatoes (into thin slices)
3.onions (with or without a coating)
4.squash
5.green onions
6.Apples
7.Pears
8.Bananas (just barely ripe)
9.Plantains
10.Pineapple
11.grapes with a batter
12. Green tomatoes
13. Edible flowers (pansies, etc.)
14.Green beans
15. Regular potatoes (this is a duh)
16.Carrots
17.Fennel
18.Fennel tops as a garnish
19.Fresh ginger, then roll it in sugar
20.Jalapeños stuffed with cheese (your choice) dipped in your favorite batter and then fried; other hot peppers, large and small can also be treated like this
21.OK, it's not a veggie or fruit, but in Texas you find something called Texas toast, deep fry white bread until brown. But the really good way to do this is deep fry French, Italian, Whole grain, Raisin Cinnamon Bread, or other good artisan breads, now those are good.
22.Corn, in or out of husk
23.Garlic in the husk, and don't burn take out of the husk and spread on bread or crackers
24.Broccoli
25.Watercress
26. Cauliflower (this one was iffy for me but some of you might like it)
Peanut Butter
1. Obviously, peanut butter and jelly on toast, bread, bagels, crackers, and even tortilla chips, preferably flour tortillas that have been toasted
2.Peanut Butter, jelly and, are you ready? Mayonnaise sandwiches, my uncle swore by these, with or without the jelly.
3.Crunchy peanut butter on hamburgers or hot dogs (yes, it's really good) and you can use creamy but I like crunchy
4.Peanut butter mixed into a sauce with hosin sauce, red pepper sauce for dipping grilled meats like Thai Sate, chicken kabobs or even grilled veggies
5.Peanut butter with sweet potatoes, either baked, or chips
6.Peanut butter, banana and marshmallow sandwiches (mom introduced me to these when I was about five, but she didn't make them often, I still love them occasionally, but keep the amount down, they are not slenderizing.
7.Peanut butter melted into a sauce that you have for almost any Chinese dish, you have to use your imagination on this one since there are too many dishes that it would work with.
8.Peanut Butter, banana, cream cheese, bread dipped in egg batter and deep fried until cheeses melt or the battered bread is nicely browned
A bunch of different things:
1.Cinnamon Chicken (mix together a little onion powder and garlic powder, a touch of ginger, and a whole bunch of cinnamon and I do mean a whole bunch, add a touch of red pepper and a touch of salt, not much) Cover the chicken with this mixture and it should look like just cinnamon, put in a fairly hot oven about 375 degrees and bake until done. I usually use just the chicken breasts with the skin on)
2.Cinnamon in your pasta sauce, not a whole bunch but some
3.Cinnamon in a black bean salsa, make it with dried black beans, not canned, cook with about 1 teaspoon cinnamon, a touch of ginger, onions, garlic, tomatoes, until the beans are finished. When cooled drain off any extra liquid, add raw chopped tomatoes, diced onions, some fresh chopped (fine chop) cilantro, stir, add a dollop of sour cream on top and serve with chips and guacamole. Different and yummy. Not hot, unless you add a jalapeño to the cooled mixture, or to the cooking beans, depending on how hot you want it.
4. Linguine with olive oil & garlic and Parmigiano-Reggiano grated on the pasta as served. You can add fresh tomatoes cut in cubes, fresh green bell peppers also added in cubes, but be careful not to add to much of either, it changes the taste of just plain olive oil & garlic. Cook the garlic slightly in the oil, don't burn it, don't even brown it except around the edges.
5.A tossed salad of tomatoes, fresh mozzarella cubes, cucumbers, red onions with red wine vinegar and olive oil for a dressing.
6.Try putting a ¼ teaspoon hot Chinese mustard in a bowl of chicken noodle soup. It changes the flavor unbelievably. I put it in Won Ton soup along with some soy sauce because most Chinese restaurants have a bland sauce.
7.Chinese mustard mixed with cream cheese and spread on celery, crackers, hamburgers, and other treats, as you think of them. Be careful how much you add because it can be HOT if it is made right.
8.Deep fry Mozzarella cheese, first roll it in cracker or bread crumbs thoroughly.
9.Deep fried honey. Take cold honey, roll into balls, fast, freeze, take out and let barely soften, roll in crushed corn flakes and deep fry until the crust is just browned. Decadent!
10.Deep fried Chocolate, see above, which you could combine and have the honey with chocolate wrapped around it, or use coca powder to cover the honey, re-chill and then dip the coca covered honey quickly in egg whites then roll in crushed corn flakes and fry to brown.
11.In many states at fair, etc. there is now a thing called fried Snickers (or other candy bar). Dipped in batter and deep fried, they are wonderful, but the calories are out of this world. I don't eat these they are too much for me.
I think that at this point I have pointed out some things that many of you knew and many that you might not. Have fun trying some of these, when you have time add to the lists I'd love to see what everyone comes up with and add them to my own lists.
