Easy delicious Tomato curry

I hope you all read my cilantro chutney which is a very healthy food.And this tomato curry is super easy to make and goes well with the tortilla,taco or just with white rice.
The best about this recipe is if you use a fresh good oil ,you can refrigerate in a clean dry container and use it for a week.And this is the base for many tasty curry recipies which I will be writing later.
Well,all you need is:
1.4 tablespoons of vegetable/corn oil
2.2 finely chopped red/yellow onion
3.6 medium sized tomato-finely chopped
4.Fresh ginger garlic paste-1 tablespoon
5.Salt to taste
6.Chilly powder-according to taste[usually I add about 2 teaspoons and add more while cooking as required]
7.2 cloves,1 cinnamon stick.
8.Coriander leaves to garnish.
Preparation:
Step1-Heat the oil in a wide base pan and add the cloves and cinnamon stick,saute for one minute.
Step 2- Now add the chopped onions and saute them until they are soft.[Add a little salt to cook faster].Add the ginger garlic paste and saute until the mixture turns brown/till the smell of the gingergarlic paste is totally gone.This browning should be kept in mind as this gives the taste and keeps the curry good for a week.
Step 3-Add the tomatoes,salt,chilly powder and mix well with the onions and just close it with the lid without adding any water.After 3-4 minutes you can find water would have oozed out from the cooking tomatoes.Now taste the curry and adjust your salt and spice accordingly.
Step 4-Cook this mixture until the oil separates from the mixture and then add cilantro to garnish and it is ready to serve.
Just grab a tortilla,spread a spoonful of tomato curry ,roll it and your simple tortilla tomato roll is ready.
