Life gets complicated some days. Today was one of them, so was yesterday for that matter. I was ill, not badly but ill, and wanted soup. I had almost nothing soup like in the house. I did have the ubiquitous chicken in the freezer, some canned veggies (yuck), some other goodies, but nothing exciting. Guess what, I managed to make soup. It contained, canned corn, canned sweet potatoes, canned mushrooms, salsa, not canned, chicken, some onion, garlic and ginger (ginger helps the stomach and I like it).
Thrown together in a pot and cooked until the chicken was tender it was quite tasty, and I was surprised but then I was hungry, since I hadn't eaten much for two days. Normally I wouldn't add sweet potatoes to a chicken soup, nor would I add salsa, but I was desperate. Oh, yeah, I added a dash of cinnamon, again, I like cinnamon and it tastes good with chicken.
Now that dish wasn't the leftovers, it was the fresh(?) made meal, and it hit the spot. But today, I was looking for something different for dinner. Again, I have yet to go to the store, have i mentioned I hate grocery shopping? I do. So, Jerry was over, I asked him what he'd like for dinner, hoping he'd suggest Mexican or something, no such luck. So I suggested leftovers. I still had some pasta from last week and thought, why the hell not, and threw that in with the soup, added some more chicken, which I cooked separately so the pasta wouldn't over cook too much, and TaDa! Dinner!
Surprisingly not bad, and Jerry even gave it a thumbs up. It always amazes me what combinations of food will go together. Jerry doesn't like corn in much, he prefers it as a stand-alone with potatoes, meat, etc., and definitely doesn't believe it should be in soup, but I think I'm converting him. At least he eats what I put in front of him. Good man, there.
SO, the moral of this blog is, if you have it, and you have the right herbs, spices and such, you just might try throwing some strange things together. You might be surprised, but be warned not everything goes together, I'll write about some of my mistakes soon.

Disclaimer: I never, ever, buy canned mushrooms, canned sweet potatoes, or other veggies, except corn, diced tomatoes, tomato paste, and a few other staples. These were given to me by my mother, who surprisingly does. She didn't when we kids, so I'm not sure why she does now, but that's where I got the canned stuff.
