Oven Fried Chicken

This recipe is one my mom always made. She never deep fried, I don't know why, but she didn't believe in it, she thought this was healthier, maybe not so much by todays standards but I love it. It's sort of Italian meets mid-west.
Anyway, you want to start with a whole frying chicken. Cut it into the number of pieces you prefer, if you do it right you can get four breast pieces by cutting them in half crosswise, and then don't forget the back, something a lot of people don't bother with but was my mom's favorite part.
OK, you've cut up the chicken, not put it in buttermilk for overnight, or at least six hours.
Preheat your oven to 350 degrees (Fahrenheit)
Now, you've marinated the chicken in buttermilk you have to start making the coating.
You need about 1 ½ to 2 cups of flour, all purpose is fine.
To the flour:
Add salt to taste, 1 to 2 tsp
Add pepper to taste, 1 to 2 tsp
Add red pepper flakes, about 2 Tbl
Add sage 2 Tbl
Add oregano 3 Tbl
Add thyme 1 to 2 Tbl
Add ½ to ¾ cup Parmesan cheese (add more if you love the cheese)
Add 1 Tbl Garlic powder
Add 1 Tbl Onion powder
Mix all these ingredients together thoroughly, adjust the seasonings as you desire
Take the chicken out of the refrigerator, and drain the buttermilk (do not try to save it, unless you want to make gravy out of it, cooking it by boiling will remove any bacteria that might be a problem otherwise.
Do not dry the chicken, leave it moist, if dry the coating won't stick.
Heat a pan on the stove and put in about 2 Tbl olive or canola oil and add 2 Tbl butter, I use unsalted.
You can let it brown slightly but don't let it burn. After the butter is melted turn off the burner.
Roll the chicken pieces in the flour until completely covered. Add the pieces to the pan, you want them to fit the pan tightly.
Now, put little dollops of butter on top of the pieces of the chicken and put in the oven. These will probably take about an hour to cook, maybe more, check temperature in the thigh piece without touching the bone the temperature should be between 165 to 170 degrees, I suggest using an instant read thermometer.
Turn the chicken once while cooking.
That's it. It sounds complicated, it is not low fat but it is yummy, at least I think so. Honestly I haven't cooked it in about 10 years but the other night I thought of this recipe when thinking of fried chicken and couldn't help share it with you, and I think I buy a chicken today and make me some.

Green beans, salad, and yes, mashed potatoes with all the fixens are good with it. A nice crisp white wine is also recommended.
