Hope you enjoyed my previous blog about lentil curry.Though it requires lot of spices nothing can beat the taste of it.
Here is the recipe for Coconut chutney, which is very very simple I must say.If I am getting sudden guests, this gives me a hand as it goes well with pancakes, Idlies [steamed rice batter, which is my next post],or with onion rings, samosas and other deep fried Indian snacks.
Ingredients:
1. Coconut-If fresh[which is best for taste],use [1/2] of the shell.
-If you use frozen shredded coconut, use 1/2 a cup.
2. 3 fresh green chillies.
-You can also use red chillies too of the same quantity.
3.Fresh coriander leaves-a handful.
4.Roasted split chick peas[You can get this in Indain grocery stores]-2/3rd of a cup.
5.Salt to taste.Usually just 1/2 a tablespoon will be good for the above quantity.
6.A few Curry leaves adds extra flavour.
Preparation:
1.Just add all the ingredient in a blender and blend them to a coarse consistency by adding
water.
2.If you want, you can add a seasoning mixture [Heat a tablespoon of vegetable oil and add 1
teaspoon of black mustard seeds1 tsp of urad dhal and a few curry leaves. The mustard seeds
must split completely].Just add this mixture on top of the blended chutney in a serving bowl ,mix and serve.
That's it! Chutney is ready to eat.It is like a dip .Try it with the onion rings.Hmmm! you will love it.
Make a crispy dosa and dip it in the lentil curry first and then in to this chutney.Oh my God! delicious breakfast ever.Try it.I am telling you all.
Tips:
1.Get the shredded coconut from freezer section, thaw the required amount in a microwavable
plate for just 30 secs[Quick defrost mode] and then add it to the blender. This gives the same
taste as done with the fresh broken coconut. I usually load my freezer with these shredded coconut packets.
2.You can store the left overs in freezer and use the quick defrost mode to thaw it just before
eating.Make sure you DO NOT use the cooking mode in microwave, as it will change the taste of the chutney and get it cooked.
If you don't have a microwave don't worry.Keep this inside a bowl of warm water for 10-15 minutes to thaw.
The main secret of this recipeis all the ingredients used are natural and raw.Do not cook it in a
pan!
3.Taste it while blending this mixture and add more chillies and salt according to taste. If your green chillies are very spicy sometimes adding just 2 of them makes it so spicy and sometimes you may need 4 to 5.So taste it and add more if you want.
