Steamed Indian style rice balls[Idli]

Idli is a very soft ,healthy steamed rice ball,made with the same rice batter which I had used earlier for making Dosa recipe.The only difficulty is, if your batter is not in correct proportion and not steamed excess,then it becomes a hard white donut.You can buy the instant mix from Indian grocery but it doesn't taste like the homemade one.

Well I must accept that initially my idli's were of hard donut consistency but now,Wow I can make good ones too.

All you need:
1.Rice batter [as explained in my other post]
2.Stainless steel Idli Maker [Like seen in this website - http://shopping.rediff.com/product/new-stainless-steel-idli-making-stand/10137570] or You can use a microwave idli maker like this one

[http://www.perfectpeninsula.com/].You can get them in big Indian grocery stores too.
3.Pressure cooker

Preparation:Very very simple procedure.

1.Heat your pressure cooker with 2 cups of water and wait till the water comes to a boil.
2.Now separate the plates from the main stand,grease the plates with a drop of oil and fill about 3/4th of the plate with batter.
3.Steam it for 10-13 minutes.The best way to find out is take a tooth pick and insert it in the middle of the idli.If no fresh batter is sticking on to it,then it is done.
4.Serve it hot with Sambhar[lentil curry] and Coconut chutney.

Tips:
-Try using the fresh fermented rice batter for making idli
-If you don't have a pressure cooker/idli maker try this method.In a wide deep pan heat 2 cups of water,take a round cake pan pour the batter to fill 3/4ths of the pan,cover it with another pan of same size and let it steam for 10-15 minutes without opening the pan.My neighbours in India had a large family and I have heard them try doing this to feed the large group.Once you are sure it is done then just scoop it out like a round cake and slice it in squares and serve hot.
