Strawberries and Balsamic Vinegar

I made a curious little treat for dessert last night- well received by the guests at the dinner party I had the pleasure of attending. I write this because there has been occasion of late when on making this unusual offering people have turned up their noses without so much as dare devil finger dip to test it out... a pity because I think this one is simply devine. The after dinner delight I am referring to is strawberries and balsamic vinegar:
Chop up a punnet of strawberries
Coat generously with caster sugar and leave for at least half an hour
Give a generous splash of balsamic vinegar- stir through and leave for at least half an hour
Somewhere between the fruit acid in the strawberries mixing with the sugar and the vinegar a reaction takes place resulting in delicious syrup.
A quirky (and tantalising) variation is to add a handful of finely sliced fresh basil to the mix- stir through and then serve with mascarpone.
Or if you want to get really fancy- try serving this in glass wear making layers of strawberries and the mascarpone and finishing the top with a flourish of basil.
Looking back- I couldn’t quite believe how good this dish tasted the first time I made it. It’s a perfect treat for people who don’t usually like desserts- the flavours are fresh and interesting and the marscarpone compliments the strawberry mix perfectly.
And, even if your guests don’t like it, at least the strange ingredients will give them something to talk about!
