Thrown together Pasta

Yummy Pasta


The other night I decided I didn't want to eat out, I was, frankly, tired of eating substandard food when I can cook better. The only problem was I hadn't been to the store in quite a while so the larder was a little bare.

Good thing I always have three major ingredients around, extra virgin olive oil, garlic and pasta. With these three ingredients, you can rummage through your cupboards, pantry, freezer and fridge and always find something that can be made into something not just eatable, but something good.


I searched the pantry, found one can of tomatoes, diced; in the fridge, onion and of course garlic; in the freezer some chicken breasts. Dinner would be made with these ingredients and herbs and spices.

It was very simple:

Saute 1/2 large onion in olive oil until it starts to brown, do not burn
Add chopped up chicken, 4-6 oz per person is more than enough
Add minced garlic (2 to 6 cloves depending on how much you like garlic)
1/4 teaspoon cinnamon (yes, cinnamon)
1/4 teaspoon ginger (yea, ginger)
1 teaspoon sage
1 teaspoon thyme

cook the chicken and onion mixture until the chicken starts to turn to white, add the diced tomatoes, juice and all, if servicing more than two, add a second can if available. Fresh tomatoes can be diced and added too if you have them.

While all this is happening bring a large pot of salted water to a boil, when it has reached a boil, add 1/2 pound or more, depending on how many you are serving, to the water, stir to separate the pasta. I used Angel Hair pasta it cooks very quickly.


While the pasta cooks, check the sauce, stirring, taste and add salt and pepper if desired, not too much salt since the pasta is cooking in salted water.

When the pasta is done, drain, do not rinse, add back to the pot and pour the sauce over the top. Toss until well mixed. Add a drizzle of olive oil and mix some more.

Serve with garlic toast, or a small salad.

After you have dished up the pasta and sauce drizzle just a touch more olive oil over the top of each serving. Add Parmesan cheese to taste, or not.

It is really quite yummy, and you can add other ingredients, like green, red or yellow bell peppers, mushrooms, green onions, butter at the end. Let your imagination go, and you'll be amazed what you can come up with.

Try inventing, empty the pantry see what you have and toss stuff together, you'll be surprised what great dishes you can come up with. I think I'm going to cook more for a while. I like freshly cooked food, especially mine.
